Prepare protein
If using raw meat: cook and shred before starting. For chicken, poach breasts in simmering water with a pinch of salt for 15–20 minutes until cooked through; cool slightly and shred with two forks. For beef, braise or pressure-cook until fork-tender and shred. Alternatively use leftover rotisserie chicken or pre-cooked shredded beef (about 2 cups).
Heat 1 tablespoon vegetable oil in a large skillet over medium heat. Add the chopped onion and cook 4–5 minutes until translucent. Add the minced garlic and cook 30 seconds until fragrant.
Add shredded chicken or beef to the skillet. Sprinkle in the ground cumin, chili powder, smoked paprika, salt, and black pepper. Stir to combine and cook 2–3 minutes to toast the spices.
Stir in 2 tablespoons tomato paste or enchilada sauce and 1 tablespoon lime juice. If the mixture seems dry, add 1–2 tablespoons water to moisten. Cook another 1–2 minutes until the filling is cohesive and most liquid has evaporated. Taste and adjust seasoning. Remove from heat and stir in chopped cilantro, if using. Let cool slightly so filling is easy to handle.
Tortillas & Frying
Warm the tortillas so they bend without cracking: wrap stacks of 4–6 tortillas in a clean kitchen towel and microwave 30–45 seconds, or heat briefly on a dry skillet 10–15 seconds per side. Keep them covered to stay pliable.
Place about 2–3 tablespoons of the filling near the bottom center of each tortilla (adjust amount to get a tight roll but not overstuffed). Roll the tortilla tightly away from you and place seam-side down on a tray. Repeat with remaining tortillas and filling.
Pour about 1 cup vegetable oil into a heavy skillet (cast iron or stainless) to a depth of about 1/4–1/2 inch for shallow frying. Heat over medium-high until shimmering and a small piece of tortilla sizzles (about 350°F / 175°C).
Fry taquitos in batches seam-side down for 1.5–2 minutes per side, turning carefully with tongs until golden brown and crisp. Do not overcrowd the pan. Transfer fried taquitos to a paper-towel-lined baking sheet and immediately sprinkle lightly with 1/2 tsp salt. Alternatively, for a lighter version, brush each assembled taquito lightly with oil and bake on a rimmed sheet at 425°F (220°C) for 12–15 minutes, turning once, until crisp.
Toppings & Serving
Arrange shredded lettuce on a serving platter. Place taquitos on top or alongside.
Top or serve each taquito with a drizzle or dollop of sour cream/crema, spoonful of salsa, a sprinkle of queso fresco, and chopped cilantro. Serve with lime wedges for squeezing over the taquitos.
Enjoy immediately while hot and crisp. Leftover taquitos can be reheated in a 400°F (200°C) oven for 6–8 minutes to re-crisp.
