Prep vegetables and seeds
Wash and thoroughly dry the mixed salad greens using a salad spinner or clean kitchen towel; tear larger leaves into bite-size pieces. Halve the baby heirloom tomatoes. Thinly slice the red onion into half-moons and separate into rings. Measure out the pumpkin seeds.
Assemble salad
In a large bowl, combine the dried mixed greens, halved heirloom tomatoes, and sliced red onion. Toss gently to combine so the tomatoes don’t burst. Sprinkle the toasted pumpkin seeds over the top. Add shaved Parmesan and toss very lightly or reserve some shavings to garnish individual plates.
Garnish
If using, scatter the fresh cilantro leaves over the salad for extra herbal brightness. Keep the salad chilled briefly while you finish the dressing, or serve immediately.
Creamy Cilantro Dressing
Combine dressing ingredients: In a blender or food processor, add the packed cilantro leaves, Greek yogurt, mayonnaise, lime juice, olive oil, honey, minced garlic, ground cumin, salt, and black pepper.
Blend until smooth: Pulse or blend on medium speed until the cilantro is fully incorporated and the dressing is smooth, about 30–45 seconds. Scrape down the sides as needed.
Adjust consistency and seasoning: With the blender running briefly, add water 1 tablespoon at a time until the dressing reaches a creamy but pourable consistency (about 1–2 tablespoons). Taste and adjust salt, pepper, or lime juice as desired.
Chill: Transfer dressing to a jar, cover, and refrigerate for at least 10 minutes to let flavors meld. Dressing will keep refrigerated up to 3 days.
Dress the salad: Just before serving, drizzle about 3–4 tablespoons of the creamy cilantro dressing over the salad (adjust to taste) and toss gently to coat. Plate and finish with additional shaved Parmesan and a light sprinkle of toasted pumpkin seeds for texture.
