Jamaica Margarita

Method
Hibiscus (Jamaica) Syrup (prepare ahead)
Simmer hibiscus
Combine dried hibiscus flowers and water in a small saucepan. Bring to a gentle boil over medium heat, then reduce to a simmer for 8 minutes until the liquid is deeply colored and aromatic.
Sweeten
Remove saucepan from heat and stir in granulated sugar until fully dissolved. If using, add lime zest now. Let the mixture cool to room temperature (about 20–30 minutes) to allow flavors to meld.
Strain and store
Strain the cooled syrup through a fine-mesh sieve into a clean jar, pressing on the solids to extract liquid. Discard solids. Refrigerate the syrup — it will keep 2–3 weeks. Measure 1 oz syrup per cocktail when ready to use.
Jamaica Margarita (assembly)
Prepare glass
Rub a lime wedge around the rim of a rocks or coupe glass. Dip the rim into coarse salt or tajín to coat. Fill the glass with fresh ice if serving on the rocks, or leave chilled if serving straight up.
Mix cocktail
In a cocktail shaker, add 2 oz Javier’s Reserva Reposado Tequila, 1 oz hibiscus (jamaica) syrup, 1 oz fresh lime juice, 0.5 oz agave nectar, and 0.5 oz orange liqueur (optional). Fill the shaker with ice.
Shake
Shake vigorously for 12–15 seconds until the shaker feels cold and slightly frosty; this chills and dilutes the drink to balance the flavors.
Adjustments & tasting notes
If the cocktail tastes too tart, add 0.25 oz more agave; if too sweet, add 0.25 oz more lime. The reposado tequila adds vanilla and oak notes that complement the floral-tart hibiscus.
