Cocktail

Method

Cocktail

1

Prepare tamarind pulp

If using fresh tamarind pods: remove shells and veins, place pulp in a small bowl, add 0.5 oz cold water and press through a fine mesh to remove fibers and seeds. If using pre-prepared pulp, measure 1 oz and thin with 0.5 oz cold water if thick. Result should be a smooth, pourable tamarind concentrate.

2

Combine ingredients

In a cocktail shaker add the prepared 1 oz tamarind pulp, 2 oz Javier’s Reserva Reposado Tequila, 0.5 oz agave nectar and 0.75 oz fresh lime juice. Add a handful of ice (about 1 cup).

3

Shake

Shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosted. This chills and dilutes the cocktail, integrating the tamarind fully.

4

Strain

Double strain the mixture (using a hawthorne and a fine mesh strainer) into a rocks glass over fresh ice or into a chilled coupe, depending on service style.

Garnish & Rim

5

Rim the glass: rub a lime wedge around the glass lip then dip into tamarind sugar or chili-salt to coat evenly.

6

Finish and serve: Garnish with a candied tamarind or a tamarind pod laid across the rim (optional). Serve immediately.
