Prep the agave honey syrup
If you don't have ready-made agave honey syrup, combine equal parts agave nectar (or miel de agave) and warm water to make a pourable syrup. For this recipe use 0.5 oz of finished syrup. Stir until fully combined and cooled.
Chill glass
Place a martini or coupe glass in the freezer for a few minutes or fill with ice water while you build the cocktail to ensure the glass is well chilled.
Build and shake
In a cocktail shaker, add 2 oz Javier’s Reserva Cristalino Añejo tequila, 0.5 oz agave honey syrup, 0.75 oz fresh lime juice, and 0.25 oz orange liqueur (if using). Add 1 dash angostura bitters if you want extra depth. Fill the shaker with ice (about 1 cup) and secure the lid.
Shake vigorously
Shake vigorously for 12–15 seconds until the shaker is very cold to the touch and the exterior has light frost. This chills and dilutes the drink to balance the honey's viscosity and the tequila's strength.
Strain
Discard the ice or water from the chilled glass. Double-strain the contents of the shaker into the chilled martini/coupe glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any pulp.
Garnish and serve
Express a lime twist over the drink to release oils, rub the rim lightly with the twist, and drop it in or place a lime wheel on the rim. Serve immediately.
