Select a clean, room-temperature tasting glass or small snifter. If using, chill the glass briefly (5–10 seconds) with a wet towel — do not over-chill; the spirit should breathe.

Prepare glass

Measure and pour 2 teaspoons (approximately 10 ml) of Louis XIII de Rémy Martin into the glass. This quantity provides a concentrated tasting portion and lets you appreciate the cognac’s complexity without overwhelming the palate.

Add spirit

If the guest prefers a slightly chilled, diluted experience, prepare one large clear ice sphere or cube and place it in the glass. Allow it to melt only a few seconds to release a whisper of cooling dilution; remove the ice once the first dilution has occurred if you want to preserve aromatics.

Optional ice

Offer a small dropper or a tbs of pure spring water on the side. Add a single drop or a few drops to the cognac to open aromatics and flavors. Encourage the guest to add incrementally — the goal is subtle opening, not heavy dilution.

Express an orange peel over the glass by holding it skin-side down and folding to release oils across the spirit, then rub the peel on the rim and drop it into the glass if desired. No bitters or mixers; Louis XIII should be the star.

Aromatics & garnish

Guide the guest to nose first with short, gentle inhales to appreciate layered aromas (flowers, honey, rancio, spice). Take a small sip, hold briefly to coat the palate, then swallow. Observe how flavors evolve; encourage adding a single drop of water if mid-palate feels closed.

Tasting procedure

Inform the guest that pours are available in multiple sizes (tasting, single pour, large pour). Confirm the requested pour size and price with the guest before serving. Typical offerings: tasting (≈2 tsp), single pour (≈30 ml), large pour (≈50 ml) — exact sizes and pricing vary by venue.

Handle the decanter respectfully. Pour carefully into a jigger or measure to ensure accurate serves. Present the bottle for guest inspection if requested and explain provenance and age as appropriate.

Offer water, a palate snack (dark chocolate or plain cracker), and a quiet moment for tasting. Never mix or mask Louis XIII with strong mixers — it is intended to be enjoyed neat or with minimal water/ice.
