Prepare avocados

Cut each avocado in half lengthwise, remove the pit, and scoop the flesh into a medium mixing bowl. Reserve one small piece of avocado if you plan to use as a garnish.

Mash and season

Using a fork or potato masher, roughly mash the avocados to your desired texture (smooth with some chunks recommended). Immediately add the 2 tablespoons fresh lime juice and 1 teaspoon kosher salt; mix to combine. The acid slows browning and seasons the avocado base.

Add aromatics

Stir in the finely diced 1/4 cup red onion, the seeded and finely chopped jalapeño, and 1/4 cup chopped cilantro. If using, fold in the seeded and diced tomato and 1/4 teaspoon ground cumin. Taste and adjust seasoning: add more salt or up to the remaining lime wedges if needed. Add the 1 teaspoon black pepper and gently combine.

Rest and meld

Let the guacamole sit at room temperature for 5–10 minutes to allow flavors to meld. If not serving immediately, press a piece of plastic wrap directly onto the surface of the guacamole to minimize air contact and refrigerate; bring back to room temperature before serving for best flavor (about 20 minutes).

Serve

Transfer guacamole to a serving bowl. Garnish with the reserved avocado piece and an additional sprinkle of chopped cilantro if desired. Serve with tortilla chips and lime wedges on the side.
