Prepare

Chill an old-fashioned or rocks glass by filling it with ice or placing it in the freezer for a few minutes. Prepare a large ice cube if available.

Mix

Add 2 oz Austero Mezcal, 0.75 oz fresh lime juice, 0.5 oz agave nectar, and 2 dashes of orange bitters into a cocktail shaker.

Shake

Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 10–15 seconds until the shaker is chilled and slightly frosted.

Strain & Serve

Discard ice from the chilled glass and place one large ice cube (or fill with fresh ice). Double-strain the cocktail into the glass using a Hawthorne strainer and, if available, a fine-mesh strainer to catch ice shards and pulp.

Garnish

Express the oils of a lime wheel or twist over the drink by holding it skin-side down over the glass and giving it a quick squeeze. Wipe the rim with the peel and drop the wheel or twist into the glass as a garnish.

Serve

Serve immediately. Sip slowly to appreciate the smoky mezcal balanced by bright lime and rounded sweetness from the agave.
