Preparation

Preparing the Rice

1. Rinse the Rice

Place 1 cup of rice in a sieve and rinse under cold water until the water runs clear. This removes excess starch.

2. Cook the Rice

In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed.

Infusing Flavor

3. Prepare the Cardamom

Crush the fresh cardamom pods slightly using a mortar and pestle or the back of a knife to release the oils.

4. Add Flavorings

In a separate pan, melt 2 tablespoons of butter over medium heat. Add the crushed cardamom pods, 1 cinnamon stick, 2 tablespoons of sugar, and 1 teaspoon of salt. Sauté for 2-3 minutes until fragrant.

5. Combine with Rice

Once the rice is cooked, fluff it with a fork and then add the flavored mixture from the pan to the rice. Stir well to combine and evenly distribute the flavors.

Serving the Dish

6. Garnish the Dish

Transfer the flavored rice to a serving platter. Garnish with 2 tablespoons of chopped mint leaves, 2 tablespoons of chopped cilantro, and 1 tablespoon of toasted almonds.

7. Serve Warm
