Preparing the Rice

Rinse the Rice

Place 1 cup of rice in a sieve and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice

In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed.

Prepare the Cardamom

Crush the fresh cardamom pods slightly using a mortar and pestle or the back of a knife to release the oils.

In a separate pan, melt 2 tablespoons of butter over medium heat. Add the crushed cardamom pods, 1 cinnamon stick, 2 tablespoons of sugar, and 1 teaspoon of salt. Sauté for 2-3 minutes until fragrant.
