Rim the Glass
Take a lime wedge and run it around the rim of your serving glass. Dip the rim into a plate of salt to coat it evenly.
Mix the Cocktail
In a cocktail shaker, combine the mezcal, fresh lime juice, agave syrup, and fresh grapefruit juice. Fill the shaker with ice and shake vigorously for about 15 seconds.
Strain and Serve
Strain the mixture into the prepared glass filled with ice. Top off with sparkling water and give it a gentle stir.
