Prepare glass

Chill a highball or hurricane glass in the freezer for 5–10 minutes, or fill with ice water while you mix the drink and then discard the water just before serving.

Combine ingredients

Add 6 fl oz pineapple juice, 2 fl oz cream of coconut, 1 fl oz heavy cream, and 1 cup of ice to a blender or cocktail shaker. If using a blender, proceed to blend; if using a shaker, fill shaker with ice and shake vigorously for 10–15 seconds.

Blend (if using blender)

Blend on high for 8–12 seconds until the mixture is smooth and slightly frothy. You want the ice broken down but still giving a creamy, slightly slushy texture.

Strain and serve

If you used a shaker, strain the mixture into the chilled glass over fresh ice. If you used a blender, pour the blended drink directly into the chilled glass.

Garnish

Garnish with a fresh pineapple wedge on the rim and a maraschino cherry. Sprinkle 1 tsp toasted coconut flakes on top if desired.

Serve

Serve immediately with a straw. Stir briefly before drinking to incorporate any settled cream.
