Prepare the rim

Pour celery salt and kosher salt onto a small plate and mix. Run the lemon wedge around the outer rim of a highball or Collins glass. Dip the glass rim into the salt mixture, pressing lightly so a thin, even rim adheres.

Build the drink

Fill the rimmed glass with ice to the top. In a mixing glass or shaker filled with ice, combine the chilled sake, optional vodka, Clamato juice, fresh lemon juice, Worcestershire sauce, soy sauce, hot sauce, and freshly ground black pepper. Stir gently for about 10–15 seconds to chill and slightly dilute.

Finish and serve

Strain (or simply pour) the mixture over the ice in the prepared glass. Taste and adjust heat or salt if needed (add more hot sauce or a pinch of celery salt). Garnish with the lemon wedge on the rim and the celery stalk, cooked shrimp, or pickled vegetable as desired. Serve immediately.

Thread the cooked shrimp onto the celery stalk or place the pickled green bean/okra on a cocktail pick. Rest the garnish across the top of the glass or stand the celery stalk inside the drink for presentation.
