Prepare the sake
While the tokkuri is warming, measure 5 oz of Hakutsuru sake at room temperature. Do not overfill — this recipe yields a 5 oz serving in the drinking cup after warming.
Empty the warming water
Carefully discard the hot water from the tokkuri. Dry the outside quickly with a towel if needed to avoid drips.
Warm the sake gently
Pour the 5 oz of Hakutsuru into the warmed tokkuri. Submerge the tokkuri in a pot of hot water (on the stove or in a bain-marie) that’s been heated to about 60–70°C (140–158°F). Keep the water level below the tokkuri’s rim so no water gets inside. Warm for 2–3 minutes until the sake reaches about 40–45°C (104–113°F) for a pleasantly warm (not hot) serving. Alternatively, for a hotter serving, warm to 50–55°C (122–131°F) for 1–2 minutes.
Serve
Remove the tokkuri from the hot water, dry the bottom, and pour the warmed sake into an ochoko or small teacup. Serve immediately. The finished pour should be approximately 5 oz in the cup.
Garnish (optional)
If using a citrus garnish, float the thin lemon slice or a small curl of yuzu peel on the surface of the sake or rest it on the cup’s rim. Add a tiny sprig of mitsuba or microgreens beside it for a subtle aromatic note. These garnishes are optional and should be minimal so as not to overpower the sake’s flavor.
Equipment
Use a tokkuri and ochoko for an authentic presentation. If neither is available, use a small heatproof pitcher and a small teacup. Ensure all vessels are warmed as described to maintain proper serving temperature.
