Preparation
Prepare the Roast
Season the chuck roast with salt, black pepper, garlic powder, and dried thyme on all sides.
Sear the Meat
In a large skillet over medium-high heat, sear the roast until browned on all sides, about 4-5 minutes per side. Remove and set aside.
Cooking
Combine Ingredients
In a slow cooker, add the chopped onions, carrots, and potatoes. Place the seared roast on top.
Add Liquids
Pour the beef broth and red wine over the roast and vegetables. Add bay leaves if using.
Cook
Cover and cook on low for 8 hours or high for 4 hours, until the meat is tender and easily shredded.
Serving
Serve
Remove the roast and vegetables from the slow cooker, slice the roast, and serve with the vegetables and some of the cooking liquid spooned over the top.
