Preparation
Marinate the Catfish
Soak the catfish fillets in buttermilk for at least 1 hour in the refrigerator to tenderize and add flavor.
Prepare the Breading
In a shallow dish, combine cornmeal, flour, cayenne pepper, salt, and black pepper. Mix well.
Frying
Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Bread the Fish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring an even coating.
Fry the Catfish
Carefully place the breaded catfish fillets in the hot oil, frying in batches if necessary. Cook for about 3-5 minutes on each side until golden brown and cooked through.
Drain and Serve
Remove the fried catfish from the oil and place on paper towels to drain excess oil. Serve hot.
