Sweeten the yogurt
In a medium bowl, gently fold 2 tablespoons of local honey into 2 cups of Ellenos Greek yogurt until evenly combined. Taste and adjust sweetness by adding up to 1 more teaspoon of honey if desired.
Fruit & Preserve
Prepare the berries
Rinse the mixed berries in cold water and gently pat dry with paper towels. If using strawberries, hull and quarter them so they are bite-sized.
Warm the seasonal preserve slightly (optional) by placing 3 tablespoons of preserve in a small microwave-safe bowl and heating 8–10 seconds, or stirring it in a small saucepan over low heat for 30 seconds. This makes it easier to swirl into the parfait.
Assembly & Garnish
Layer the parfaits
Divide the honey-sweetened yogurt evenly into 2 serving glasses or bowls (about 1 cup yogurt per serving). Spoon half of the warm (or room-temperature) seasonal preserve over the yogurt in each glass, then add half of the berries, followed by 1½ tablespoons of granola. Repeat with a second layer: remaining yogurt, remaining preserve, remaining berries, and remaining granola.
Finish and garnish: Drizzle about 1 teaspoon of honey across the top of each parfait and sprinkle a small pinch of extra granola for texture. Add 2 mint leaves to each serving if using. Serve immediately so the granola stays crisp.
