Method
Brioche French toast
Prepare bread
Slice the brioche loaf into 1-inch thick slices (about 8–10 slices depending on loaf). If the loaf is very fresh, lightly toast the slices on a baking sheet at 300°F (150°C) for 6–8 minutes to dry slightly — this helps soak the custard without falling apart.
Make custard
In a wide shallow bowl or baking dish large enough to hold two slices side-by-side, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon and sea salt until fully combined and slightly frothy.
Soak slices
Working 2 slices at a time, submerge each brioche slice in the custard for 20–30 seconds per side, turning once. Allow the bread to soak until it has absorbed custard but is not falling apart (longer if using drier day-old bread). Transfer soaked slices to a wire rack while you heat the pan.
Cook French toast
Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tablespoon unsalted butter and let it melt until foaming but not browned. Add two soaked brioche slices and cook 3–4 minutes per side until golden brown and caramelized, pressing gently with a spatula for uniform contact. Add more butter (about 1 tablespoon) before each batch. Transfer cooked slices to a warm plate and keep in a low oven (200°F / 95°C) while you finish remaining slices.

Brown butter
In a small heavy saucepan over medium heat, melt 6 tablespoons unsalted butter. Swirl the pan occasionally; the butter will foam, then the milk solids will brown and smell nutty. Watch closely — when the butter turns a deep golden-brown and releases a toasted aroma (about 4–6 minutes), immediately remove from heat to prevent burning.
Finish sauce
Carefully return the pan to low heat. Add the light brown sugar and stir until dissolved. Add maple syrup and stir to combine. Stir in the lemon juice and 1 tablespoon heavy cream to stabilize and add gloss. Taste and add a pinch of fine sea salt if needed. Keep warm over the lowest heat, stirring occasionally. For tableside service, transfer the sauce to a small warmed saucepot (or small copper pan) so it can be poured at the table.
Toppings & tableside finish
Arrange 1–2 slices of cooked brioche French toast on each serving plate (depending on appetite). Dust lightly with confectioners' sugar and scatter fresh berries alongside. Add a dollop of whipped cream to the plate and garnish with mint leaves if using.
At the table: Rewarm the caramel-brown butter sauce briefly if needed. Pour 2–3 tablespoons of warm sauce over each serving (more to taste) so the sauce sizzles slightly on the warm toast. Offer extra sauce on the side. Serve immediately so the toast is warm and the sauce is glossy.
