Prepare fruit

If using fresh strawberries, hull and halve them. Peel the banana and break into chunks. If using a whole medjool date, remove the pit and roughly chop the flesh so it blends more easily.

Measure acerola

If using acerola powder, mix it with the 3 tbsp (oz-equivalent) of coconut or plain water to form a smooth slurry. If using frozen or fresh acerola cherries or puree, measure 2 tablespoons and set aside.

Assemble in blender

Add the strawberries, banana, chopped coconut meat, chopped date, and the prepared acerola to the blender. Pour in 3 oz (about 90 ml) of cold water or coconut water.

Add 1 tablespoon raw pumpkin seeds, the optional 2 tablespoons yogurt (if using), 1 teaspoon lemon juice (if using), and 1 teaspoon maple syrup or honey (if using and additional sweetness is desired). Add 4 ice cubes if you used fresh fruit and want a colder, thicker texture.

Blend

Secure the blender lid and blend on high for 45–75 seconds, or until the mixture is completely smooth and creamy. Stop and scrape down the sides with a spatula once if necessary, then blend again for 10–15 seconds.

Adjust and serve

Taste the smoothie and adjust sweetness or acidity: add another 1/2 tsp maple syrup or 1/2 tsp lemon juice if desired and briefly pulse to combine. Pour into a glass and sprinkle a pinch of extra pumpkin seeds on top for garnish.

Serve immediately for best flavor and nutrient retention.
