Prepare fruit

Peel and cube the ripe mango and chop the pineapple into small chunks. If using frozen fruit to thicken, measure 1/2 cup and keep frozen until blending.

Add the fresh mango, fresh pineapple, and frozen fruit (if using) to the blender jar.

Pour in 3 tablespoons of canned coconut milk and 1/2 cup cold water or coconut water. The coconut milk adds creaminess while the water controls thickness.

Add 1 tablespoon lucuma powder to the blender. Lucuma provides a mild caramel-like sweetness and a buttery texture.

Grate 1 teaspoon fresh ginger directly into the blender for bright, warming spice. Add 1 tablespoon fresh lime juice and a pinch of fine sea salt to enhance flavors.

If you prefer a sweeter smoothie, add 1 teaspoon honey or agave syrup. Taste after blending and adjust sweetener if needed.

Blend & Finish

Secure the blender lid. Blend on high for 45–60 seconds, or until the mixture is completely smooth and velvety. Stop and scrape down the sides once if needed, then blend again for 10–15 seconds.

Check the consistency. If too thick, add 1–2 tablespoons more water/coconut water and pulse to combine. If too thin, add a few more ice cubes or 2 tablespoons frozen fruit and blend briefly.

Taste and adjust: add another 1/2 teaspoon honey/agave or a squeeze more lime if desired. Blend 3–5 seconds to incorporate adjustments.

Serve & Garnish

Pour the finished Pineapple Mango Refresh into a chilled glass (about 12–14 oz capacity).

Garnish with a sprinkle of toasted coconut flakes and a pineapple wedge or mango slice on the rim. Add the ice cubes to the glass before pouring if you prefer a very cold drink.
