Black Truffle Crostini with Ricotta & Honey

Prepare truffle

Clean the fresh black truffle by brushing gently with a soft brush and wiping with a barely damp paper towel. Pat dry. Using a truffle slicer or the thinnest blade on a vegetable peeler, shave the truffle into very thin slices. Reserve in a small bowl covered with a paper towel at room temperature.

Toast baguette

Preheat oven to 375°F (190°C). Lightly brush both sides of each baguette slice with 1 tablespoon olive oil and spread a thin smear of softened butter on one side. Arrange slices on a baking sheet in a single layer and bake 8–10 minutes, turning once halfway, until edges are crisp and tops are lightly golden. Remove and let cool slightly.

Make ricotta mixture

In a medium bowl, combine whole-milk ricotta, remaining 1 tablespoon olive oil, lemon zest, lemon juice, 1/2 teaspoon sea salt, and 1/4 teaspoon freshly ground black pepper. Stir until creamy and smooth. Taste and adjust seasoning; the ricotta should be bright and slightly seasoned but not salty.

Assemble crostini

Spread about 1 heaping tablespoon of the ricotta mixture onto each toasted baguette slice. Arrange 2–3 thin truffle slices on top of each ricotta-topped crostini, distributing the truffle evenly across the 10 slices. If any truffle slices are large, tear them into smaller pieces for even coverage.

Finish and serve

Drizzle each crostini with about 1/8 teaspoon of honey (total ~2 tsp across all). Sprinkle remaining 1/2 teaspoon sea salt (or flaky finishing salt) lightly across the crostini and finish with the remaining 3/4 teaspoon freshly ground black pepper to taste. Garnish with small amounts of microgreens or baby arugula if using. Serve immediately so truffle aroma is freshest.
