Prepare the Shrimp

In a medium bowl, combine the shrimp with salt, black pepper, and cayenne pepper. Make sure the shrimp are evenly coated with the spices.

Set Up Breading Station

Prepare three shallow dishes: one with all-purpose flour, one with beaten eggs, and one with panko breadcrumbs. This will be your breading station.

Bread the Shrimp

Take each seasoned shrimp and first coat it in flour, shaking off the excess. Then, dip it into the beaten eggs, and finally coat it in panko breadcrumbs. Place the breaded shrimp on a plate and repeat with all shrimp.

Heat the Oil

In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small piece of bread into it; if it sizzles, it’s ready.

Fry the Shrimp

Carefully add a few breaded shrimp to the hot oil, being careful not to overcrowd the pan. Fry until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove the shrimp and place them on a paper towel-lined plate to drain excess oil.

Prepare Sherry Mayo

In a small bowl, whisk together the mayonnaise, sherry vinegar, and a pinch of salt until smooth. Adjust seasoning to taste.

Prepare Cocktail Sauce

In another small bowl, mix together ketchup, horseradish, and lemon juice. Adjust the horseradish according to your spice preference.
