1

Prepare the Oysters

Preheat the oven to 425°F (220°C). Carefully shuck the oysters and place them on a baking sheet, keeping them in their half shells.

2

Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and let cool. Once cooled, crumble the bacon into small pieces.

3

Sauté Spinach and Garlic

In the same skillet with the bacon drippings, add 2 tablespoons of butter. Once melted, add minced garlic and sauté for about 1 minute. Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat.

4

Combine Topping Ingredients

In a bowl, mix together the sautéed spinach and garlic, crumbled bacon, breadcrumbs, lemon juice, salt, black pepper, and 1 cup of parmesan cheese. Mix until well combined.

5

Top the Oysters

Spoon the spinach and bacon mixture generously over each oyster in their shells.

6

Add Topping Cheese

Sprinkle an additional cup of parmesan cheese over the top of the oysters.

7

Bake the Oysters

Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the topping is golden brown and the cheese is melted.

8

Serve

Remove the oysters from the oven and allow them to cool slightly. Serve warm, garnished with lemon wedges if desired.
