Rinse 4 cups of mixed fresh berries and pat dry. Hull or remove stems as needed. Measure 4 cups and set aside a handful for garnish if desired.
In a medium saucepan, combine 1 cup water and 1.5 cups granulated sugar. Warm over medium heat, stirring occasionally, until the sugar fully dissolves to form a clear simple syrup. Do not boil aggressively.
Remove the syrup from heat and stir in 2 tablespoons fresh lemon juice and 0.25 teaspoon salt. Allow the syrup to cool to room temperature.
Puree the berries in a blender or food processor until smooth. With the blender running, gradually add the cooled syrup to the berry puree, starting with about 1 cup of syrup and adjusting sweetness to taste. Mix until well combined.
Optional: pass the mixture through a fine-mesh sieve to remove seeds for a smoother texture. Chill the strained berry mixture in the refrigerator for at least 2 hours, ideally 4 hours or longer.
Churn the chilled berry mixture in your sorbet maker according to the manufacturer's instructions, typically about 20–25 minutes, until it resembles soft-serve frozen dessert.
Scoop the sorbet into a freezer-safe container and freeze for 2–4 hours to firm up. Before serving, let stand for 5–10 minutes at room temperature if it’s very hard.
