Roasted Turkey Sandwich with Brie, Apple, Apricot Chutney, Arugula

Preheat oven

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

Toast bread

Split the rustique roll. Butter the cut sides lightly. Toast on a skillet over medium heat until golden and crisp.

Warm turkey

If using cold deli turkey, warm slices in a skillet over low heat or in the microwave just until warmed through.

Chutney base

Spread apricot chutney on the bottom half of the roll.

Layer cheese and turkey

Place Brie slices on the bottom half so they begin to melt, then add warm turkey slices.

Add greens and fruit

Top with arugula, apple slices, and tomato slices.

Finish sandwich

Close the sandwich with the top half. Optional: press briefly in the skillet to help melt Brie.

Prepare fries

Spread the fries on a separate baking sheet. Toss with olive oil, salt, and pepper. Roast in the oven 20–25 minutes, flipping halfway, until golden and crispy.

Serve

Slice the sandwich in half and serve immediately with the hot fries on the side.
