In a large brew kettle, add the pale malt, crystal malt, and carapils malt to the water. Heat the mixture to 66°C (150°F) and hold for 60 minutes.

Mashing

After mashing, sparge the grains with enough hot water to collect around 15 liters of wort.

Sparging

Bring the wort to a boil and add the first hop addition (Citra). Boil for 60 minutes, adding the remaining hop additions at intervals: Mosaic and Simcoe at 15 minutes, Amarillo at 10 minutes, Galaxy at 5 minutes, Nelson Sauvin at 2 minutes, and El Dorado at flameout.

Boiling

Cool the wort rapidly using a wort chiller to around 20°C (68°F).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal the vessel. Allow it to ferment for about 1-2 weeks at 18-20°C (64-68°F).

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer before bottling. Bottle the beer and cap it. Allow it to carbonate for another 1-2 weeks.

Once carbonated, chill the bottles and enjoy your Scepter IPA!
