In a large mash tun, combine the barley malt, rice, and 95 liters of water. Heat the mixture to 65°C (149°F) and maintain this temperature for 60 minutes to convert the starches into fermentable sugars.

Mashing

After mashing, transfer the mash to a lauter tun. Rinse the grain with additional hot water (around 70°C or 158°F) to extract the sugars. Collect the wort, aiming for a total of about 120 liters.

Lautering

Boil the wort for 60 minutes, adding the hops at the beginning of the boil for bitterness. Optionally, add more hops for aroma in the last 15 minutes of the boil.

Boiling

After boiling, cool the wort quickly to about 20°C (68°F) using a wort chiller to prevent contamination.

Cooling

Transfer the cooled wort to a fermentation vessel and pitch the yeast. Seal the vessel and allow it to ferment at around 18-20°C (64-68°F) for about 1-2 weeks.

Fermentation

Once fermentation is complete, condition the beer for another week to develop flavors. You can carbonate it by adding a small amount of sugar before bottling.

Conditioning

Bottle the beer using sanitized bottles and caps, and let it age for at least another week before enjoying.
