    Chill glass

    Place a coupe or rocks glass in the freezer or fill it with ice water while you prepare the cocktail to chill.

    Measure and combine

    In a mixing glass add 2 oz WhistlePig 10 Year Straight Rye, 0.75 oz sweet vermouth, 0.25 oz simple syrup, 2 dashes Angostura bitters and 1 dash orange bitters.

    Stir

    Add large ice cubes to the mixing glass and stir gently with a bar spoon for 30–45 seconds (about 20–30 full revolutions) until the mix is well chilled and slightly diluted. Aim for a silky, glossy texture and a temperature around 0–4°C (32–39°F).

    Prepare glass & strain

    Discard ice water from the chilled glass. Using a julep or Hawthorne strainer, double-strain into the chilled coupe or serve over one large clear ice cube in a rocks glass, depending on preference.

    Express orange oil

    Take an orange peel and hold it skin-side down over the drink. Give it a firm twist to express the oils across the surface, then rub the peel around the glass rim and drop it into the cocktail as garnish.

Optional Smoked Finish

    Smoke the glass (optional)

    If using a smoker or smoking dome, place the prepared empty chilled glass under the dome. Ignite the wood chip or cinnamon stick and trap the smoke in the dome for 10–20 seconds, then cover and let the glass sit in the smoke for 20–30 seconds to pick up aroma. Pour the finished cocktail into the smoked glass.

    Smoke the cocktail (alternative)

    Place the finished cocktail in a mixing glass or under a smoking dome, fill dome with smoke for 5–10 seconds and cover for 10–20 seconds, then remove dome and serve. Use caution with open flame and ventilation.
