Prepare bacon

Place a medium skillet or cast-iron pan over medium heat. Arrange 3 slices of Sterling (thick-cut) bacon in a single layer. Cook 6–9 minutes, turning occasionally, until edges are crisp and centers are cooked but still slightly pliable. Transfer bacon to a paper-towel-lined plate to drain. Reserve 1 teaspoon of bacon fat in the pan and discard excess or wipe out pan if you prefer to use fresh oil.

Toast bread

While bacon finishes, spread 1 tbs unsalted butter evenly on one side of each of the 2 bread slices. Heat a clean skillet over medium-low. Place bread buttered-side down in the skillet and toast 1–2 minutes until golden and crisp, then flip and toast the other side 30–45 seconds until lightly golden. Remove and keep warm. Alternatively, toast to preference in a toaster and butter after toasting.

Fry eggs

Wipe the skillet used for bacon (or use a nonstick pan), add 1 tsp neutral oil and warm over medium. Crack two large eggs into a small bowl one at a time to check for shells. When oil shimmers, gently slide eggs into the pan, spacing them apart. Cook for a runny-yolk fried egg (sunny-side or over-easy): cook undisturbed 2–3 minutes until whites are mostly set. Season with 1/4 tsp kosher salt and 1/8 tsp freshly ground black pepper. For over-easy, gently flip each egg with a spatula and cook 10–20 seconds more for a still-runny yolk; for over-medium cook 45–60 seconds more. If you reserved bacon fat, you may spoon a little over the whites while cooking to crisp edges and add flavor.

Assemble sandwich

Spread 1 tsp mayonnaise on the unbuttered side of one toasted bread slice. Place 2 slices of 2-year aged Vermont cheddar on top of the mayo. Immediately place the hot fried eggs on the cheese so residual heat begins to soften it. Lay the 3 bacon slices over the eggs. Top with the second toasted bread slice, butter-side out if you toasted that way. Press gently.

Finish and serve

Let the sandwich sit 30 seconds so the cheese softens further. If you prefer melted cheese, after assembling transfer sandwich back to the warm skillet and press gently with a spatula or weighted pan for 30–60 seconds, flipping once, to melt the cheddar and crisp the exterior. Slice in half if desired and serve immediately.
