Prep and optional marinade
If frying and time allows, butterfly or pound each chicken breast to 1/2-inch thickness. Season both sides with 1 tsp salt, 1/2 tsp black pepper, 1/4 tsp smoked paprika, and 1/4 tsp garlic powder. For juicier fried chicken, place seasoned chicken in a shallow dish, pour 1/2 cup buttermilk over it, cover, and chill 30–60 minutes. If grilling, you can skip the buttermilk.

Dredge (for fried) or oil (for grilled)
If frying: combine 3/4 cup all-purpose flour with 1/2 tsp salt, 1/2 tsp black pepper, 1/4 tsp smoked paprika, and 1/4 tsp garlic powder in a shallow bowl. Remove chicken from buttermilk (let excess drip), dredge thoroughly in the flour mixture, and set aside on a rack for 5 minutes. If grilling: brush chicken lightly with 1 tbsp olive oil and keep seasoning on the surface.

Frying method: heat 2–3 tbsp vegetable oil in a large skillet over medium-high heat until shimmering (about 350°F if using thermometer). Add chicken and fry 4–5 minutes per side until golden brown and internal temperature reaches 165°F. Transfer to a paper-towel-lined plate and rest 5 minutes. Grilling method: preheat grill or grill pan to medium-high. Grill chicken 5–6 minutes per side until char marks appear and internal temp is 165°F. Rest 5 minutes, then slice into 1/2-inch strips for wrapping.

Brown the sausage: in a medium skillet over medium heat, add the 1 lb breakfast sausage and cook, breaking it into small pieces, until no pink remains and fat is rendered, about 6–8 minutes. Do not drain completely — reserve about 1–2 tbsp of the fat in the pan and discard excess if there's more than that.

Make roux and add milk: reduce heat to medium-low and add 2 tbsp unsalted butter to the pan with the reserved fat. Stir in 1/4 cup all-purpose flour and cook, stirring constantly, for 1–2 minutes to eliminate raw flour taste but do not let it darken.

Finish gravy: gradually whisk in 2 cups whole milk until smooth. Increase heat to medium and cook, stirring frequently, until gravy thickens about 4–6 minutes. Stir in 1/4 cup heavy cream (optional) for a richer texture. Season with 1 tsp salt, 1 tsp black pepper, and 1/4 tsp crushed red pepper flakes. Taste and adjust seasoning. Keep warm on low; if gravy becomes too thick, thin with up to 1/4 cup additional milk and rewarm gently.

Layer: place a warm tortilla on a work surface (butter side down if using). Lay 1 leaf of lettuce in the center, then place sliced chicken (about 4–5 oz cooked chicken per wrap). Spoon 1/3 to 1/2 cup hot sausage gravy over the chicken, allowing some to soak into the meat but not so much it soaks the tortilla. Sprinkle 1/4 cup shredded cheddar cheese and 1 slice crumbled bacon (or 1 whole slice) and a few pickled jalapeños if using. Drizzle with 1/2 tsp hot sauce if desired. Repeat for remaining wraps.

Fold and crisp: fold the sides of the tortilla in, then roll tightly from the bottom to form a wrap. Optional — return the wrap to the skillet over medium-low and press gently, toasting 1–2 minutes per side until golden and cheese melts. Alternatively, place in a sandwich press for 2–3 minutes.
