    Marinate chicken

    Trim excess fat from chicken thighs and pound lightly to an even thickness (about 1/2 inch). In a bowl, whisk together buttermilk, 2 tablespoons hot sauce, 1 teaspoon kosher salt, 1/2 teaspoon black pepper, and 1/2 teaspoon granulated garlic. Submerge the chicken in the marinade, cover, and refrigerate for at least 1 hour and up to 6 hours.

    Prepare breading

    In a shallow dish, combine flour, cornstarch, 1 teaspoon paprika, 1 teaspoon cayenne, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon black pepper, and 1 teaspoon kosher salt. Stir to evenly distribute spices.

    Dredge the chicken

    Remove chicken from the buttermilk, allowing excess to drip off. Dredge each piece thoroughly in the seasoned flour mixture, pressing so the coating adheres. Set coated pieces on a rack and let rest 10 minutes to set the crust.

    Fry the chicken

    Pour vegetable oil into a medium skillet or Dutch oven to a depth of about 1" (about 1 cup) and heat over medium-high until it reaches 350°F (175°C) or a small pinch of flour sizzles immediately. Fry chicken in batches, do not overcrowd, 3–5 minutes per side until golden brown and an instant-read thermometer reads 165°F (74°C). Transfer to a wire rack set over a baking sheet and rest 5 minutes.

Nashville Hot Sauce / Topping Oil

    Make the spicy oil

    In a small saucepan, melt the unsalted butter over low heat. Stir in 2 teaspoons cayenne pepper, 1 teaspoon smoked paprika, 1 teaspoon brown sugar, 1 tablespoon hot sauce, 1/2 teaspoon apple cider vinegar, and 1/4 teaspoon salt. Warm until butter is fully melted and sugar dissolved, whisk to combine. Taste carefully and adjust cayenne or hot sauce to preferred heat.

    Coat the chicken

    Brush or spoon about half of the spicy butter mixture generously over the fried chicken pieces so they are well coated. Reserve the remaining spicy oil for drizzling onto the fries during assembly.

    Cook fries

    Cook frozen fries according to package instructions (bake or air-fry) until very crispy, or fry homemade fries until golden and crisp. Transfer fries to a large oven-safe platter or sheet pan. Sprinkle flaky sea salt over fries while hot.

    Arrange cheeses

    Scatter shredded cheddar and pepper jack evenly over hot fries. Place the platter under a broiler for 1–2 minutes or into a 425°F (220°C) oven for 3–5 minutes just until cheese melts and becomes bubbly. Watch closely to avoid burning.

    Slice and finish chicken

    Slice the spicy-coated chicken into bite-size strips or chunks. If desired, toss the sliced chicken briefly with any residual spicy butter to ensure flavor.

    Assemble loaded fries

    Top the melted-cheese fries with the sliced Nashville hot chicken, then drizzle the reserved spicy oil over the whole dish. Add pickles and scatter sliced green onions. Dollop or drizzle ranch dressing over the top and finish with a light dusting of extra cayenne and flaky sea salt. If using, finish with a small drizzle of hot honey for sweet heat contrast.
