Muddle citrus

Cut the lemon, lime and orange halves into 4–6 wedges each (use half of each fruit total as listed). Place the lemon, lime and orange wedges in the bottom of a sturdy mixing glass or a rocks glass. Add the granulated sugar and the simple syrup. Using a muddler, press and twist firmly 6–8 times until the fruit releases bright juice and aromatic oils but not so hard that you pulverize the rinds into bits.

Add bitters & bourbon

Add 3 dashes of Angostura bitters to the muddled citrus. Pour in 2 oz Wild Turkey bourbon. Stir vigorously with a bar spoon (or a long spoon) for 10–15 seconds to combine flavors and slightly chill the mixture.

Prepare glass

Fill a Collins or highball glass with crushed ice until about 3/4 full (about 1 cup crushed ice). If you prefer a stiffer drink, use a rocks glass and large ice cubes instead.

Assemble

Strain the muddled bourbon-citrus mixture over the prepared glass of crushed ice. Add 4 ice cubes if using a rocks/highball glass. Top gently with 1 oz sparkling water if desired for brightness (optional). Give the drink one gentle stir to integrate the top.

Garnish & serve

Finish with a lemon wheel on the rim and a mint sprig tucked into the ice if using. Serve with a short straw or stirring stick. Advise the drinker to give a quick stir before drinking to redistribute citrus and bourbon.
