Fried Chicken

1. Prep and marinate
Trim and pound thighs lightly to even thickness (about 3/4 inch). In a bowl combine 1 cup buttermilk, 1 tablespoon hot sauce, 1 teaspoon kosher salt and 1 teaspoon black pepper. Submerge chicken, cover and refrigerate at least 2 hours or up to overnight.

2. Make dredge
In a shallow bowl or plate whisk together 1.5 cups all-purpose flour, 1/4 cup cornstarch, 1 teaspoon smoked paprika, 1 teaspoon cayenne, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1 teaspoon kosher salt and 1/2 teaspoon black pepper. Shake excess marinade from each piece of chicken and press each piece into the flour mixture until well coated. Set on a wire rack for 10 minutes to rest so flour adheres.

3. Fry chicken
Heat 4 cups neutral oil in a heavy skillet or Dutch oven to 350°F (175°C). If you don't have a thermometer heat until a small pinch of flour sizzles immediately. Fry chicken in batches, skin-side down first, for 5–7 minutes per side until deeply golden and internal temperature reaches 165°F (74°C). Drain on a wire rack set over a sheet pan.

4. Make spicy oil
While chicken fries, combine 1/2 cup neutral oil, 2 tablespoons hot chili powder, 1 teaspoon smoked paprika, 1 teaspoon brown sugar, 1/2 teaspoon garlic powder, 1 teaspoon apple cider vinegar, 1/2 teaspoon kosher salt and 1/2 teaspoon cayenne (optional) in a heatproof bowl. Warm the 1/2 cup oil until shimmering but not smoking (about 275–300°F / 135–150°C) then carefully pour the hot oil over the dry spice mixture. Whisk until combined and let rest 2 minutes. Taste and adjust salt or vinegar as needed. The oil should be bright red-orange and spicy.

7. Assemble sandwiches
If using, spread 1 teaspoon mayonnaise on each bottom biscuit half. Place a piece of Nashville hot chicken on each bottom half, top with 2 tablespoons hot sour pickles (sliced) and optional pickled jalapeños to taste. Spoon a little extra Nashville hot oil over the pickles if you like more heat. Close with biscuit top.

8. Garnish and serve
Serve immediately while chicken is hot and crisp. Offer extra hot sauce or cayenne at the table. Makes 4 sandwiches. Leftover spicy oil can be refrigerated and used within 1 week.
