Cocktail

Method

Cocktail

  1. 1

    Chill glass

Place a rocks glass in the freezer for a few minutes or fill with ice and water to chill while you prepare the cocktail.

  2. 2

    Combine ingredients

In a mixing glass add 2 oz High West Midwinter Nights Dram, 0.75 oz Dolin Rouge vermouth, 0.25 oz Averna amaro, 0.25 oz orange curaçao, 2 dashes Angostura bitters, 1 dash chocolate bitters, and 0.25 oz simple syrup (use only if you prefer a touch more sweetness).

  3. 3

    Stir

Fill the mixing glass with large ice and stir gently but steadily for about 30–45 seconds (or until the outside of the glass is well chilled and the liquid is slightly diluted, roughly 20–25% dilution by eye/feel). The goal is to both chill and integrate the viscous liqueurs and bitters.

  4. 4

    Prepare glass

Discard the ice/water from the chilled rocks glass and add one large clear ice cube (or two medium cubes) to the glass.

  5. 5

    Strain

Double-strain or use a Hawthorne and julep/mesh strainer to pour the mixed cocktail into the prepared rocks glass over the large ice cube.

Garnish & Finish

  1. 6

    Express orange oils

Hold an orange peel about 2–3 inches above the glass and quickly give it a firm twist to express the oils over the surface of the drink. Rub the peel's rim around the glass if desired.

  2. 7

    Garnish

Drop the expressed orange twist into the drink and, if desired, add one Luxardo or amarena cherry on a pick. Serve immediately.
