    Split and toast the English muffin or toast one slice of bread until golden and warm. Shred the cheddar cheese if not pre-shredded and set aside near the stove.

    Crack eggs

    Crack 2 large eggs into a small bowl and lightly beat with a fork until yolks and whites are combined. Season with 1 tsp salt and 1/4 tsp freshly ground black pepper; mix briefly to incorporate.

Cook Eggs & Assemble

    Heat pan

    Place a nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt until it foams and begins to sizzle gently but does not brown.

    Cook eggs

    Pour the beaten eggs into the skillet. Let the eggs sit undisturbed for about 10–15 seconds until the edges just begin to set. Using a rubber spatula, gently push the set edges toward the center, tilting the pan to allow uncooked egg to flow underneath. Continue this folding motion for 1.5–2 minutes until the eggs are mostly set but still slightly glossy and soft (for folded/scrambled style).

    Add cheese

    Sprinkle the 1 ounce shredded cheddar evenly over the eggs, then cover the pan with a lid or a large plate for 20–30 seconds. This traps steam and melts the cheese without overcooking the eggs.

    Finish and season

    Remove the lid. If desired, give the eggs one gentle fold to combine melted cheese. Taste and adjust seasoning with a pinch more salt or pepper if needed.

    Assemble sandwich or plate

    Place the toasted English muffin or toast on a plate. Slide the hot cheesy eggs onto the bread. Sprinkle with finely chopped fresh chives and add hot sauce or ketchup to taste. Serve immediately.
