Method
Crust
Combine chocolate cookie crumbs, melted butter, granulated sugar, and salt in a medium bowl. Stir until mixture resembles wet sand and holds together when pressed.
Press the crumb mixture firmly and evenly into the bottom and up the sides of the pie dish to form a compact crust (use the bottom of a measuring cup or a flat glass to press).
Bake the crust for 8–10 minutes until set. Remove from oven and cool on a rack while you prepare the filling. Reduce oven temperature to 325°F (160°C) if you plan to gently set the filling in oven (optional step noted below).
Chocolate Silk Filling
Chop the chocolate finely and place in a heatproof bowl.
Melt the chocolate using a double boiler (set the bowl over gently simmering water without letting the bowl touch the water) or carefully in short bursts in the microwave (20–30 seconds, stirring between bursts) until smooth. Remove from heat and let cool slightly, stirring occasionally so it doesn't seize.
In the bowl of a stand mixer fitted with the paddle attachment (or using a large bowl and electric hand mixer), beat the softened butter on medium-high speed for 2–3 minutes until creamy and pale.
With the mixer running on medium, gradually add the granulated sugar and continue to beat until light and fluffy, about 2–3 minutes. Scrape down the bowl as needed.
Mix in the vanilla extract, espresso (if using), and a pinch of salt until combined.
Pour the remaining melted chocolate into the butter-egg mixture and beat on low speed until just combined, then increase to medium and beat for 30 seconds to 1 minute until silky and uniform. Scrape down the sides and bottom of the bowl and give a final short mix to ensure everything is incorporated.
Taste and adjust: if the filling taste is very sweet or too thick, add a tiny pinch more salt; if needed, a teaspoon of espresso can brighten the chocolate flavor.
Pour the chocolate filling into the cooled prepared crust and smooth the top with an offset spatula.
Chill the pie: refrigerate uncovered for about 2 hours to set, then cover loosely with plastic wrap and chill at least 4 hours or overnight for best texture. (Alternate quicker finish: place pie in a 325°F (160°C) oven for 8–10 minutes after filling to slightly set edges, then cool and refrigerate — this is optional and traditional silk pie is usually chilled without baking.)
Whipped Cream Topping
Chill a medium bowl and beaters in the freezer for 10–15 minutes to help the cream whip better.
Pour the heavy cream into the chilled bowl. Add powdered sugar and vanilla extract.
Whip on medium-high speed until soft peaks form for a lighter topping, or until medium-stiff peaks form if you prefer a firmer topping. Be careful not to overwhip; stop when peaks hold shape but are still silky.
Spread or pipe the whipped cream over the chilled chocolate filling. Return to the refrigerator for at least 15 minutes to settle before serving.
Garnish
Just before serving, garnish the pie with chocolate shavings or curls and lightly dust the surface with cocoa powder if desired.
Slice with a warm, clean knife (dip in hot water and wipe dry between cuts for clean slices) and serve chilled.
