Prepare Glass

Chill and glassware
Chill a pint glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the other components. When chilled, discard ice water and set the glass aside.

Build the cocktail
In a cocktail shaker (no ice), combine the fresh grapefruit juice (1 oz), fresh lime juice (0.5 oz) and simple syrup (0.5 oz). Add two dashes of aromatic bitters. Add a small handful of ice to the shaker and shake vigorously for 8–10 seconds to chill and slightly dilute.

Strain and top with beer
Strain the shaken citrus mix into the chilled pint glass over fresh ice (about 1 cup). Slowly pour 12 oz of Toppling Goliath Pseudo Sue (or a similar American IPA) down the side of the glass to preserve some carbonation, allowing the beer to gently float on top and integrate with the citrus base.

Give the drink one gentle stir with a barspoon (1–2 slow turns) to marry the beer and citrus without losing too much carbonation. Slap the mint sprig between your palms to release aromatics and place it on top of the drink. Garnish with a grapefruit wheel or twist on the rim.
