Prepare the Fire Roasted Cherry Tomatoes

Preheat your oven to 400°F (200°C). Toss the cherry tomatoes with olive oil, salt, and black pepper. Spread them out on a baking sheet and roast for 15-20 minutes, or until they are blistered and juicy.

Make the Smashed Avocado

While the tomatoes are roasting, cut the avocados in half and remove the pits. Scoop the flesh into a bowl, add salt, black pepper, and red pepper flakes to taste, and mash until creamy but still chunky.

Poach the Eggs

Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes or until the whites are set but the yolks are still runny. Remove with a slotted spoon.

Toast the English Muffins

While the eggs are poaching, split the English muffins and toast them until golden brown.

Assemble the California Benedict

Spread a generous amount of smashed avocado on each toasted English muffin half. Top with the fire roasted cherry tomatoes and a poached egg. Garnish with chopped cilantro or parsley.
