Prepare the French Fries

Cook the French fries according to your preferred method (deep frying, baking, or air frying) until golden and crispy. Set aside.

Make the Gravy

In a saucepan over medium heat, melt the butter. Add the flour and whisk continuously for about 2-3 minutes to create a roux.

Add Liquids

Slowly pour in the Guinness beer and beef broth while whisking constantly to avoid lumps. Bring to a simmer and cook until the gravy thickens, about 5-7 minutes.

Season the Gravy

Add salt and black pepper to taste. If you prefer Colorado style, mix in the green chili at this point.

Assemble the Poutine

On a plate or in a bowl, layer the hot French fries, then pour the hot gravy over them. Top generously with cheese curds.

Serve immediately while hot, allowing the cheese curds to melt slightly from the heat of the fries and gravy.
