Make the Pastry Crust

In a mixing bowl, combine the flour, sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs. Add the egg yolk and ice water, mixing just until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Pre-bake the Crust

Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface and fit it into tartlet pans. Prick the bottom with a fork and bake for 15-20 minutes, or until golden. Let cool.

Prepare the Custard Filling

In a saucepan, heat the milk over medium heat until warm. In a separate bowl, whisk together sugar and cornstarch. Slowly whisk the warm milk into the sugar mixture until smooth. Return to the saucepan and cook, stirring constantly until thickened. Remove from heat and stir in vanilla extract. Let cool slightly.

Assemble the Tartlets

Once the pastry crusts are cool, fill each tartlet with the custard. Top with an assortment of fresh fruits. Chill in the refrigerator for at least 30 minutes before serving.
