Preparation Steps
Cook the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and cook for 15 minutes or until rice is tender. Remove from heat and let it sit covered for 10 minutes.
Prepare Honey-Lime Ponzu
In a small bowl, whisk together the honey, lime juice, soy sauce, and a pinch of salt. Set aside.
Assemble the Poke Bowl
In a serving bowl, place a scoop of the cooked sushi rice as the base. Top with diced ahi tuna, a drizzle of honey-lime ponzu, and the mango salsa. Add seaweed salad on the side.
Garnish and Serve
Sprinkle sesame seeds on top and add fried wontons for crunch. Serve immediately.
