Prepare the Goat Cheese

Slice the goat cheese into 1-inch rounds and place them in the freezer for 30 minutes to firm up.

Prepare the Coating

In three separate bowls, place flour in the first, beaten egg in the second, and breadcrumbs mixed with dried lavender in the third.

Coat the Cheese

Remove the goat cheese from the freezer. Dredge each round first in flour, then dip in the egg, and finally coat with the lavender breadcrumbs.

Fry the Cheese

In a large skillet, heat vegetable oil over medium heat. Once hot, fry the coated goat cheese rounds for about 2-3 minutes on each side, or until golden brown. Remove and drain on paper towels.

Assemble the Dish

On a serving platter, arrange the fried goat cheese rounds. Top with pickled apples, pea tendrils, and drizzle with honey. Garnish with fresh mint leaves and serve with crostini.
