Chicken Lollipops

Prepare the Chicken

Trim the chicken drumsticks to create lollipops by pushing the meat down to one end and exposing the bone. Pat dry with paper towels.

Marinate the Chicken

In a bowl, mix the fermented chili sauce and buffalo sauce. Add the chicken lollipops, ensuring they are well coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

Make the Bleu Cheese Mousse

In a mixing bowl, combine the Point Reyes bleu cheese and heavy cream. Using an electric mixer, whip until smooth and airy. Season with salt and black pepper to taste. Fold in finely chopped chives, reserving some for garnish.

Fry the Chicken

Heat oil in a deep frying pan over medium-high heat. Fry the marinated chicken lollipops in batches until golden brown and cooked through, about 10-12 minutes. Drain on paper towels.

Serve

Arrange the chicken lollipops on a serving platter. Serve with the bleu cheese mousse on the side, garnished with additional chives.
