Preparation Steps
Frying Tortillas
Heat the vegetable oil in a large skillet over medium-high heat.
Create Tortilla Chips
Fry the corn tortillas in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels and season lightly with salt.
Layering Ingredients
On a large serving platter or baking sheet, layer the fried corn tortillas evenly.
Adding Cheese and Queso
Sprinkle the aged white cheddar cheese over the tortillas, and then drizzle the yellow queso on top.
Adding Pork and Vegetables
Add the slow smoked pulled pork, pickled jalapenos, and pickled onions evenly over the cheese and queso.
Final Heating
Place the assembled nachos in a preheated oven at 350°F (175°C) for about 5-7 minutes, or until the cheese is melted and bubbly.
Serving
Remove from the oven and serve hot with a side of sour cream.
