Preparation of Herbs

    Combine Herbs

    In a large glass jar, combine the dried wormwood, hyssop, lemon balm, peppermint, oregano, angelica root, sage, and thyme. Mix them well to ensure an even distribution.

    Add Neutral Grain Spirit

    Pour the 750 ml of neutral grain spirit into the jar with the herbs. Seal the jar tightly and shake gently to combine. Let it infuse for 2 weeks in a cool, dark place.

Infusion Process

    Strain the Mixture

    After 2 weeks, strain the infused spirit through a fine mesh strainer or cheesecloth into a clean container, discarding the solid herbs.

    Prepare Simple Syrup

    In a saucepan, combine equal parts sugar and water (e.g., 250 ml sugar and 250 ml water). Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and let cool.

Final Preparation

    Mix Infusion and Syrup

    Once the simple syrup is cool, combine it with the strained herbal infusion and stir well.

    Add Coloring (Optional)

    For a green chartreuse, add spirulina powder and mix until fully dissolved. For a yellow chartreuse, steep saffron threads in a small amount of warm water and add to the mixture. Stir to combine.

    Bottle the Chartreuse

    Pour the finished chartreuse into clean, sterilized bottles. Seal tightly and store in a cool, dark place.
