For the Tiramisu
Method
Prepare the Coffee Mixture
- 1
Brew Espresso
Brew 200 ml of espresso coffee and allow it to cool to room temperature. If desired, mix in the coffee liqueur for added flavor.
Make the Mascarpone Mixture
- 2
Whisk Egg Yolks and Sugar
In a large mixing bowl, whisk together 4 egg yolks and 100 g of granulated sugar until the mixture is pale and thick.
- 3
Add Mascarpone and Vanilla
Gently fold in 500 g of mascarpone cheese and 1 tsp of vanilla extract until smooth and well combined.
- 4
Whip Heavy Cream
In a separate bowl, whip 250 ml of heavy cream until stiff peaks form.
- 5
Combine Mixtures
Carefully fold the whipped cream into the mascarpone mixture until fully incorporated.
Assemble the Tiramisu
- 6
Dip Ladyfingers
Quickly dip each ladyfinger cookie (approximately 24 pieces) into the cooled espresso mixture, ensuring they are soaked but not soggy.
- 7
Layer the Ingredients
In a rectangular dish, place a layer of dipped ladyfingers on the bottom. Spread half of the mascarpone mixture over the ladyfingers.
- 8
Repeat Layers
Add another layer of dipped ladyfingers followed by the remaining mascarpone mixture, smoothing the top with a spatula.
Chill and Serve
- 9
Dust with Cocoa
Sift 30 g of cocoa powder evenly over the top of the tiramisu.
- 10
Refrigerate
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
- 11
Garnish and Serve
Before serving, garnish with dark chocolate shavings and additional cocoa powder if desired. Serve chilled.
