Method

Cooking the Pasta

    Boil the Water

    Fill a large pot with water, add a generous pinch of salt, and bring it to a boil.

    Cook the Spaghetti

    Once the water is boiling, add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining, reserve about 1 cup of pasta water, then drain the spaghetti and set aside.

Preparing the Sauce

    Mix the Eggs and Cheese

    In a mixing bowl, whisk together the eggs and grated Parmesan cheese until well combined. Add black pepper to taste.

Cooking the Pancetta

    Cook the Pancetta

    In a large skillet over medium heat, add the pancetta. Cook until it is crispy and golden brown, about 5-7 minutes. Remove from heat.

Combining Ingredients

    Combine Everything

    Add the drained spaghetti to the skillet with the pancetta. Toss to combine and let cool for a minute.

    Add Egg Mixture

    Slowly pour the egg and cheese mixture over the spaghetti, tossing quickly to create a creamy sauce without scrambling the eggs. If needed, add reserved pasta water a little at a time to reach desired creaminess.

    Garnish

    Serve immediately, garnished with chopped fresh parsley and additional black pepper, if desired.
