Pasta

Method

Prepare the Pasta

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Once cooked, drain and set aside.

Prepare the Vegetables

  1. 2

    Chop the Vegetables

While the pasta is cooking, wash and chop the bell peppers, zucchini, cherry tomatoes, carrot, and asparagus into bite-sized pieces.

Make the Garlic Sauce

  1. 3

    Sauté the Garlic

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

  2. 4

    Add the Vegetables

Add the chopped vegetables to the skillet and stir-fry for about 5-7 minutes until they are tender but still crisp.

  3. 5

    Add Broth and Season

Pour in the vegetable broth and bring to a simmer. Season with salt and black pepper to taste.

  4. 6

    Combine Pasta and Sauce

Add the cooked pasta to the skillet and toss to combine with the garlic sauce and vegetables. Cook for an additional 2-3 minutes to heat everything through.

  5. 7

    Finish with Cheese and Basil

Remove from heat and stir in the grated Parmesan cheese and chopped fresh basil until well combined.

Serve

  1. 8

    Plate the Dish

Serve the Pasta Primavera warm, garnished with extra Parmesan cheese and basil if desired.
