    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.

    Prepare the Guanciale

    While the pasta cooks, cut the guanciale into small strips. In a large skillet over medium heat, cook the guanciale until crispy and golden brown, about 5-7 minutes. Remove from heat.

Sauce Assembly

    Mix the Sauce

    In a bowl, whisk together the eggs, grated Pecorino Romano cheese, and black pepper until well combined.

    Combine Pasta and Guanciale

    Once the pasta is cooked and drained, add it to the skillet with the guanciale. Toss to combine, allowing the residual heat from the pasta to slightly cool before adding the egg mixture.

    Add the Sauce

    Pour the egg and cheese mixture over the pasta, quickly tossing to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serving

    Plate the Pasta

    Serve the carbonara immediately, garnished with chopped fresh parsley and additional Pecorino Romano cheese if desired.
