Prepare Gelatin
In a small bowl, combine the gelatin powder and water. Let it sit for about 5-10 minutes until it blooms and absorbs the water.

Heat Cream Mixture
In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir frequently until the mixture is hot but not boiling.

Add Vanilla and Gelatin
Remove the saucepan from heat. Stir in the vanilla extract and the bloomed gelatin until fully dissolved.

Pour into Molds
Pour the mixture into individual serving cups or molds. Allow them to cool at room temperature for about 30 minutes.

Chill
Cover the cups with plastic wrap and refrigerate for at least 4 hours or until set.
Berry Sauce

Prepare Berries
In a saucepan, combine the mixed berries, granulated sugar, and lemon juice.

Cook Sauce
Cook over medium heat, stirring gently, until the berries release their juices and the mixture thickens slightly, about 10 minutes.

Cool and Strain (Optional)
Remove from heat and let the sauce cool. If a smoother sauce is desired, strain the mixture to remove seeds.
