Cook the Orecchiette
Bring a large pot of salted water to a boil. Add the orecchiette pasta and cook according to package instructions until al dente, typically about 9-11 minutes. Drain and set aside.

Prepare the Sausage
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the house-made sausage, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 5-7 minutes. Remove the sausage from the skillet and set aside.

Sauté the Onions and Spinach
In the same skillet, add the chopped cipollini onions. Sauté until they become translucent, about 3-4 minutes. Add the fresh spinach and cook until wilted, about 2 minutes.

Combine Ingredients
Return the sausage to the skillet with the onions and spinach. Add the roasted red peppers and stir to combine. Pour in the vodka sauce and stir until everything is well coated. Let it simmer for about 5 minutes.

Mix with Orecchiette
Add the cooked orecchiette to the skillet with the sausage and sauce mixture. Toss everything together until the pasta is evenly coated. Season with salt and black pepper to taste.

Serve the orecchiette con salsiccia hot, garnished with freshly grated Parmesan cheese.
